Guinness Chocolate Cupcakes with Whiskey Caramel & Baileys Buttercream

We were in search of a unique St. Paddy's day dessert recipe. The classics are always four-leaf clover shaped cookies, mint and chocolate, or anything with green food coloring. These all become expected and we wanted something new and decadent. Luckily, we stumbled across these delicious cupcakes from a website called A Classic Twist that were the perfect combination of booze and chocolate.


These cupcakes consist of a Guinness Chocolate Cupcake, a salted caramel whiskey filling, and a Bailey's Irish Cream buttercream frosting. For the filling, we used my go-to homemade salted caramel sauce recipe from Sally's Baking Addiction, and added whiskey to it. Yum!


What we love about it: The cake was extremely moist and the whiskey salted caramel filling was such a nice compliment to the chocolate. The frosting was soft and luscious, with just the perfect touch of Bailey's Irish Cream. These are a perfect treat to bring to or have at a St. Paddy's Day party and you'll really wow guests!


Modifications:


1. We'll be adding a touch more salt because these cupcakes are definitely on the sweet side - especially if you take a big bite of the buttercream.


2. We'll use more durable cupcake liners because the ones we used were flimsy against the weight of these cupcakes - which become heavy with the filling and frosting. You could double up the liners, which is what was done on the website, or use foil liners.


3. Unless you have a lot of time carved out to make these, you'll probably want to make them in two parts. The first day make the cupcakes themselves, store them in an airtight container, and the next day make the filling and frosting, and then assemble. They tasted the best the day of and the next day, but stayed fresh for about five days.


Notes for next time: First, Definitely don't bake these if you're on a diet! They're a very decadent cake with a lot of sugar and added booze.

Secondly, these cupcakes go best with a glass of milk, and you'll probably only be able to eat one because they're extremely rich.


Third, if you aren't a very experience cupcake baker, just make sure you follow the directions correctly! These have quite a few steps that require precision (like making the caramel and using the booze correctly) and assembly/decoration may be tricky for a novice baker (or a wonderful learning experience, too!).
