You can find a lot of energy bites on Pinterest, but this one from a site called Chef Savvy, is my all-time favorite go-to recipe. If you've never made energy bites before, they're a great way to pack a ton of flavor into one little bite. Most of them are packed with protein too, like this one. Energy bites are great if you want to eat a little something for breakfast but don't have much time. They're the perfect grab and go treat. These ones also make a wonderful pre-gym or pre-workout snack because of the protein, fiber, and potassium.
Why we love it: This quick and simple recipe only requires 5 ingredients! And the best part, they're deliciously wholesome
and rich in protein. You get that softness from the peanut butter, a tiny bit of sweetness from the honey, and a little crunch and texture from the chocolate chips and oats. They're also totally versatile - you can try making them with various types of chocolate chips or variations of ground flax seed. These treats are great to keep in the fridge to grab for a quick morning breakfast treat, afternoon snack, or pre-gym fuel. Plus, no baking required. They stay fresh for about a week in the fridge.
Modifications: As I mentioned above, this recipe is so versatile. Once I used espresso chocolate chips, instead of regular chocolate chips. It added an extra layer of coffee flavor that was delicious. I typically use 60% cacao dark chocolate chips because I like the flavor profile best and I LOVE dark chocolate. Get creative and try out your favorite chocolate chips.
I've also used chia seeds instead of the ground flax seeds and they turned out great, too! But I personally like to use the ground flax seed that the recipe calls for because it blends better (and the chia seeds annoyingly get caught in your teeth).
Notes for next time:
It makes about 12 bites, depending on how big or small you roll them. You may want to double the recipe if you know they'll be a few people eating them or if you know it'll be a busy week filled with gym sessions!
When combining the ingredients, I find it easier to blend it all together with my hands rather than using a rubber spatula (the ingredients tend to stick more to the spatula than to each other). After combining the ingredients, definitely listen to the recipe and let this sit in the fridge for 15-30 minutes before rolling. It makes it much easier to roll them!
